happy little chocolate avocado cupcakes-with rainbow sprinkles!


yup. avocado cupcakes. these cupcakes are so so so so so good!!! these might just be the best chocolate cupcakes i ever made.  i love them, love them, love them. 


my husband has been a little stressed at work lately so i made him some "love ya cupcakes".  i wanted to combine his two favorite foods (chocolate and avocados) with mine (cupcakes!).   i found this awesome recipe from vegetarian times and just made a few substitutions. 

here's the yummy ingredients i used:

1  1/2 cups all-purpose flour
3/4 cups unsweetened cocoa powder
1 tsp. baking powder
3/4 tsp. baking soda
3/4 tsp. salt
1 avocado, pitted and peeled
1 cup agave nectar (substituted for maple syrup)
3/4 cup nonfat milk (substituted for soy milk)
1/3 cup canola oil
2 tsp. vanilla extract

you can follow the directions on the vegetarian times website. the recipe says it makes 12 cupcakes but i actually had enough batter to make 12 regular cupcakes plus 12 minis.

 i love they way they baked with puffy tops.

for a quick topping i dipped them in chocolate. i bought a whole bunch of these baker's dipping chocolate containers because i found them on sale for less than a dollar each. i kinda like the way they look on top of cupcakes and it is really easy substitute for frosting. especially when i don't feel like washing lots of dishes!

so, my husband says he likes the chocolate cupcakes from VCTOTW  a little better, but these are the best to me! please, please, please try these little cupcakes and tell me if you love them as much as i do!

    Pen Pen- the chocolate does harden once it dries so it tastes kinda like the frosting on a Hostess cupcake :) It's really good!

  8. We are going to make these tomorrow! I'll let you know how they come out. I'll be ever so grateful to you if they come out as good as they look. It is so hard baking with egg & dairy restrictions (daughter's allergies.)

  9. YUMM! We made them today and they came out better than I could ever have imagined. They rose beautifully, were slightly crunchy outside and moist inside. I think this is the first vegan recipe that I have tried that you can't tell there is no egg or dairy. Thank you! My daughters were in cupcake heaven!
